Matcha Coconut Bliss Balls

Do you like Matcha? Do you like coconut? Why not have both? (cue the music). Bliss balls are a slight obsession of mine. I’m all about bite size snacks, especially if they’re healthy, easy to make, but most importantly super yummy. These will take less than 10 minutes to make and they’re refined sugar free, dairy free (vegan), gluten free, paleo friendly AND no baking required. So basically they’re perfect and you should make and eat a lot of them. They’re a balanced blend of green tea and coconut and will give you that needed energy boost whenever you need it!

Ingredients

1 cup dessicated coconut

4 T. almond flour

2 T. rice malt syrup, more or less to taste*

1 T. coconut oil

1 T. matcha green tea – I used Nature’s way superfood green tea (pictured right)

Method

1 Place all ingredients in a large bowl, then mix mix mix until all combined! Alternatively, if you’ve got a food processor just pop everything into there and blend away.

2 Once mixed well roll them in balls, I did mine roughly 2-3cm but can really do whatever size you’re feeling. I rolled mine in desiccated coconut afterward as it made them look slightly less overwhelming for those who don’t love matcha and also because i can never have enough coconut in my recipes.

3 Store them in the fridge to set but they can be eaten straight away.
