This is a recipe for easy and quick vegan Cheese Sauce. If you’re vegan you likely would’ve heard the common response “I reckon I could go vegan but I love cheese too much!”, Give this creamy Cheese Sauce a try because it’s so versatile! I poured it all over macaroni pasta for a comforting Mac n’ Cheese but it could also be used as a side dip with some corn chips, lasagne or your favourite pizza!
The recipe base for the sauce is nutritional yeast flakes or Nooch as it’s often called. Nutritional yeast is something that should not be missed in a vegan household. It’s one of my secret (but not so secret) ingredients for vegan cooking.
Vegan cheeses are becoming more readily available to purchase, most supermarkets now sell a few brand and labours to choose from and health food stores are often a gold mine for all things vegetarian and vegan, there’s always something new to try! But homemade is better a lot of the time and I haven’t yet found a cheesy sauce like this one. And the best part about is that it literally takes about 5 minutes to make, seriously? Seriously. It comes together so quickly and only requires a handful of simple ingredients. So get your macaroni pasta ready because it’s cheesy time!
Makes about 3/4 cup enough for 1 lasagna, 2 pizzas or a whole pot of Mac & Cheese.
2 tablespoons coconut oil or vegan butter (Nuttelex or other brand of choice)
1/3 cup plain flour
1/2 tsp salt
1/4 tsp curry powder
1/4 tsp paprika powder
ground pepper to taste
1 pinch of garlic powder
1/3 cup nutritional yeast
1/2 cup water
Soy milk or vegan milk of choice for thinning if required
1 Heat the coconut oil or butter in a small pot on low heat.
2 Add the salt, pepper, paprika powder, curry powder & garlic powder.
3 Add in the flour and whisk.
4 Add nutritional yeast, whisk again until clumpy.
5 Add the water and whisk on low heat for a few minutes. If it gets too thick you can add a little bit more water and whisk again.
6 Use it as a dip, pour it over some lasagne or pasta or whatever you like. Enjoy!
