I’d heard so much about the magical fruit that is known as the jackfruit. I’d never seen it in the shops, never tasted it but apparently it could be the BEST vegan pulled pork. I had to find it, I had to make it and I certainly did and now you can too in just a few easy to follow steps!
So what exactly is jackfruit and how does it work in this recipe? Jackfruit is a tree fruit native to Southeast Asia. It has an incredible talent of absorbing practically by flavour you give it and the texture is surprisingly meat-like, hence why it’s just perfect in substitute meat dishes like this one! It’s also full of fiber and vitamins and incredibly easy to work with.
** tip: Combine your BBQ jackfruit into fresh bread rolls and crunchy slaw to produce a sandwich that will fool even the meatiest meat lover! The texture is spot on and the sweet BBQ marinade will melt in their sweet little mouths.
2 cans young green jackfruit pieces in water or brine (NOT syrup) ~ commonly found in Asian grocery stores and selected health food stores!
Homemade BBQ seasoning 2 TBS brown sugar + 1 tsp paprika + 1 tsp garlic powder + 1/2 tsp salt + 1/2 tsp pepper + 1/2 tsp chili powder)
3/4 cup Sweet Baby Rays BBQ sauce (Or your preferred vegan BBQ substitute) + more for topping optional
1 Rinse & thoroughly dry jackfruit pieces and set aside to make the BBQ seasoning.
2 In a small bowl mix all the seasoning ingredients and add to jackfruit, make sure coated evenly.
3 Heat a large frying pan with 1-2tbsp of oil on medium heat. Add the jackfruit and cook for 3-4 minutes to brown the fruit.
4 Stir in the homemade BBQ sauce and thin to a sauce by added water if required. Stir and reduce heat and cook for further 20 minutes.
5 Remove lid and stir every now and then to ensure even cooking. At this point you can use two forks to shred the jackfruit for that meaty pulled texture!
8 Fill your fresh bread rolls with plenty of slaw and your BBQ and serve however you wish! I finished mine off with some homemade garlic spiced wedges and sideslaw but completely up to you!
**Tip: I had lots of leftover jackfruit, it keeps well in the fridge for a couple days but a lot tastier when fresh so don’t leave it for long!
